I like to serve a variety of dips when I have people over, I often make queso dip, chicken Alfredo dip, and this irresistible Reuben dip. It's super creamy and full of savory flavors.

How do you make Reuben dip?
This dip is a blend of corned beef, sauerkraut, cream cheese, sour cream, Thousand Island dressing and Swiss cheese. Mix everything together, then spread it into a baking dish. A layer of cheese goes over the top, then the dip is baked until browned and bubbly. Add a sprinkling of parsley and enjoy!
Tips for Reuben dip
- This dip can be assembled up to one day before you plan to serve it. Simply cover and store in the fridge until you're ready to bake it. You may need to add a few more minutes onto the baking time to compensate for starting with a cold dip.
- Make sure your cream cheese is at room temperature before you mix up your dip. If the cream cheese is too cold, the corned beef will break up into tiny pieces as you mix everything together. I think this dip tastes best with larger pieces of corned beef!
- You can use mayonnaise instead of sour cream if you prefer.
- You can use cubed corned beef or deli style sliced corned beef for this dip, whichever is easiest for you to find! I used leftover corned beef from a previous night's dinner.
- I like to use freshly grated cheese for this dip. It's a little more work, but the bagged pre-shredded cheeses are often coated with stabilizing agents and they don't melt nearly as well.
- I typically use bottled Thousand Island dressing, but you can make your own if you prefer.

- 8 ounces cream cheese softened
- 1 1/2 cups corned beef diced or chopped
- 1 1/2 cups Swiss cheese shredded
- 1/2 cup sour cream
- 1/2 cup sauerkraut drained
- 1/4 cup Thousand Island dressing
- 2 tablespoons chopped parsley

Preheat the oven to 425 degrees F. Coat a small baking dish or skillet with cooking spray.

Place the cream cheese, corned beef, 3/4 cup Swiss cheese, sour cream, sauerkraut and Thousand Island dressing in a bowl. Stir gently until blended.

Spread the cream cheese mixture into an even layer in your prepared dish. Top with remaining 3/4 cup of cheese.

Bake for 15-20 minutes or until cheese is browned and dip is bubbling. Top with parsley, then serve.
